Mutton Paya

Ingredients

  • 4 Ib Mutton Paya
  • 2 Onion finely sliced
  • 1/2 Cup Desiccated Coconut
  • 6 Tbsp Plain Yogurt
  • 1 Tsp Cumin Powder
  • 1 Tsp Red Chili Powder
  • 1 Tsp Garam Masala
  • 1 Tsp Kashmiri Powder
  • 1 Tsp Turmeric Powder
  • 2-4 Tbsp Mutton Masala
  • 5-12 Green Cardamom Pods
  • 6-10 Black Peppercorns
  • 6-10 Cloves
  • 1 Tsp Sesame Seeds
  • 1-2 Cinnamon Sticks
  • 1-2 Bay Leaves
  • 5 Tbsp Ginger Paste
  • 5 Tbsp Garlic Paste
  • 1 Tsp Fenugreek Leaves
  • 3-6 Cups Water so that Mutton Paya are immersed in water
  • 4-6 Green Pepper for Garnish
  • Mint for Garnish
  • Ginger Julienne for garnish
  • Fresh Lemon Juice for garnish

Instructions

  1. Make sure you wash all the paya properly.
  2. Prepare Spicy Yogurt Mix.
    • 6 Tbsp Plain Yogurt
    • 1 Tsp Cumin Powder
    • 1 Tsp Red Chili Powder
    • 1 Tsp Garam Masala
    • 1 Tsp Kashmiri Powder
    • 1 Tsp Turmeric Powder
    • 2-4 Tbsp Mutton Masala
  3. Dry Roast Whole Spices
    • 5-12 Green Cardamom Pods
    • 6-10 Black Peppercorns
    • 6-10 Cloves
    • 1 Tsp Sesame Seeds
    • 1-2 Cinnamon Sticks
    • 1-2 Bay Leaves
  4. In a deep bottom pot, heat oil.
  5. Sautee onions, add ginger and garlic paste, desiccated coconuts – add whole spices – mix until well combined.
  6. Add spicy yogurt, salt to taste and mix.
  7. Add 1 Cup Water to yogurt mix, simmer until masala separates from oil.
  8. Add Mutton paya, coat well with masala gravy.
  9. Add fenugreek leaves, mix.
  10. Add 3-6 Cups Water.
  11. Close pressure cooker.
  12. Cook on high pressure for 50 minutes, natural release.
  13. Garnish with Mint/Ginger.
  14.  Serve Mutton Paya with Naan.
