Ginger Grape Roasted Chicken


  • 1 Whole Chicken
  • 2 Tbsp. Ginger
  • 2 Tbsp. Lemon Juice
  • ¼ Cup Olive Oil
  • 2 Tsp Cinnamon
  • 2 Tsp Cumin
  • 2 Tsp Ancho Chili
  • 1 Tsp Parsley
  • 1 ½ Tsp Salt
  • 1 Tsp Ground Black Pepper
  • 1 Cup Chicken Stock
  • ½ Cup Green Seedless Grapes
  • ½ Cup Red Seedless Grapes
  • 1 Cup Red Onions
  • 1 Tbsp Olive Oil
  • ½ Tsp Ancho Chili
  • ½ Tsp Cumin
  • ½ Tsp Parsley
  • ½ Tsp Salt


  1. In a bowl place the whole chicken.
  2. Marinate the chicken with Cumin, Salt, Ground Black Pepper, Ancho Chili Pepper, Parsley, Ginger, Olive Oil, Lemon Juice, Cinnamon Powder.  
  3. Rub the Chicken with all the spices and Marinate for 1 hour.
  4. Heat oven to 400F.
  5. In an oven safe bowl transfer the marinated chicken. Put into the oven. Cook for 25 Minutes.
  6. Halfway through cooking, Add in Chicken Stock. Bake for another 15-20 Minutes or until Chicken is fully cooked.
  7. Heat a fry pan, add 1 tbsp. olive oil and sauté onions. Add ½ tsp ancho chili, ½ tsp cumin, ½ tsp parsley, ½ tsp salt. Mix.
  8. Add grapes – combine with sautéed onions and cook until the grapes are soft but still holds their shape.
  9. Take chicken out of the oven and serve along with the cooked grapes.
  10. Enjoy!
