Ingredients
- 1 Whole Chicken
- 2 Tbsp. Ginger
- 2 Tbsp. Lemon Juice
- ¼ Cup Olive Oil
- 2 Tsp Cinnamon
- 2 Tsp Cumin
- 2 Tsp Ancho Chili
- 1 Tsp Parsley
- 1 ½ Tsp Salt
- 1 Tsp Ground Black Pepper
- 1 Cup Chicken Stock
- ½ Cup Green Seedless Grapes
- ½ Cup Red Seedless Grapes
- 1 Cup Red Onions
- 1 Tbsp Olive Oil
- ½ Tsp Ancho Chili
- ½ Tsp Cumin
- ½ Tsp Parsley
- ½ Tsp Salt
Directions:
- In a bowl place the whole chicken.
- Marinate the chicken with Cumin, Salt, Ground Black Pepper, Ancho Chili Pepper, Parsley, Ginger, Olive Oil, Lemon Juice, Cinnamon Powder.
- Rub the Chicken with all the spices and Marinate for 1 hour.
- Heat oven to 400F.
- In an oven safe bowl transfer the marinated chicken. Put into the oven. Cook for 25 Minutes.
- Halfway through cooking, Add in Chicken Stock. Bake for another 15-20 Minutes or until Chicken is fully cooked.
- Heat a fry pan, add 1 tbsp. olive oil and sauté onions. Add ½ tsp ancho chili, ½ tsp cumin, ½ tsp parsley, ½ tsp salt. Mix.
- Add grapes – combine with sautéed onions and cook until the grapes are soft but still holds their shape.
- Take chicken out of the oven and serve along with the cooked grapes.
