Hyderabadi Masala Chicken

Ingredients

  • Chicken with Bones
  • 200ml Plain Yogurt Whisked 200ml
  • 3 Tbsp – Ginger Garlic Paste
  • 2 Cups Barista (Fried Onions)
  • 3-4 Tsp Salt or to Taste
  • 8 Dry Red Chillies Peppers
  • 4 Tsp Coriander Seeds
  • 2 Tsp Cumin Seeds
  • 1 Small Onion, quartered
  • 1 Tsp Turmeric Powder
  • 2 Tsp Kashmiri Chilli Powder
  • 1 Tsp Garam Masala Powder
  • 3-6 Tbsp Oil
  • 1 Tsp Ghee (At the End)

Step 1 – The Preparation:

  • 200ml Plain Yogurt Whisked
  • 3 Tbsp – Ginger Garlic Paste
  • 2 Cups Barista
  • 3-4 Tsp Salt or to Taste

Marinate the chicken with plain yogurt, ginger-garlic paste, birista (fried onion) and salt. and set aside for 1 hour.

Step 2 – The Paste:

  • 8 Dry Red Chillies
  • 4 Tsp Coriander Seeds
  • 2 Tsp Cumin Seeds
  • 1 Small Onion, quartered

In a small fry pan – Add dry red chillies, coriander seeds, cumin and roast until aromatic smell releases for 2-3 minutes. Let it cool. Now add the dry roasted spice mixes, quartered onion into a grinder & blend until smooth. Set Aside.

Step 3 – The Process

  • 1 Tsp Turmeric Powder
  • 2 Tsp Kashmiri Chilli Powder
  • 1 Tsp Garam Masala Powder
  • 3-6 Tbsp Oil

Heat oil in a kadhai. Add the ground masala paste & fry on medium to low heat for 10 mins till the raw smell is gone & oil separates. Make sure the colour of the paste isn’t dark or the colour of the gravy will change.

Add turmeric and kashmiri chilli powder and fry. Add water as needed.

Add the marinated chicken, mix well & cook on high flame for around 5 mins. Continue to cook on medium flame for another 10 mins till the chicken & the masala starts changing color.

Add Water as Needed. Mix well & cook for around 15 mins.

Add the Garam Masala powder & simmer for another 5 mins till oil separates & all the masalas are cooked well.

Add a cup & half of water, mix it well & cook covered for 15mins till the chicken is tender.

Add Ghee when done.

Serve hot with Naan or Rice.
